Ingredients

For the Kheer Bites

  • ½ cup basmati rice
  • 3 cups full-fat milk
  • ¾ cup Sarbu Jaggery Powder
  • 2 tbsp milk powder
  • ½ tsp cardamom powder
  • 2 tbsp chopped almonds
  • 2 tbsp chopped cashews
  • 1 tbsp raisins
  • 1 tbsp ghee
  • 1 tbsp desiccated coconut
  • 1 tbsp chopped pistachios

For Garnishing

  • Chopped pistachios
  • Almond slivers
  • A light sprinkle of cardamom powder

Instructions

Step 1: Prepare the Rice

  1. Wash the basmati rice thoroughly and soak it in water for 15–20 minutes.
  2. Drain well and lightly crush the rice using a mortar and pestle or pulse it once in a mixer.
  3. Keep aside.

Step 2: Cook the Kheer

  1. Heat milk in a heavy-bottomed pan and bring it to a gentle boil.
  2. Add the rice and cook on low heat, stirring frequently.
  3. Continue cooking for 15–20 minutes until the rice is completely soft and the milk thickens.
  4. Add milk powder, almonds, cashews, raisins, and desiccated coconut.
  5. Cook for another 3–4 minutes.

Step 3: Add the Jaggery & Cardamom

  1. Turn off the heat and allow the kheer to cool slightly.
  2. Add Sarbu Jaggery Powder and mix thoroughly until completely dissolved.
  3. Add cardamom powder and mix well.
  4. If the mixture appears too loose, cook it for another 2–3 minutes on low heat until it becomes thick enough to shape.

Step 4: Shape the Kheer Bites

  1. Grease your palms lightly with ghee.
  2. Take small portions of the cooled, thickened kheer mixture.
  3. Roll gently into small bite-sized balls.
  4. If needed, refrigerate the mixture for 20–30 minutes to make shaping easier.

Step 5: Garnish & Chill

  1. Roll each bite in chopped pistachios or almond slivers.
  2. Sprinkle lightly with cardamom powder.
  3. Refrigerate for at least 30 minutes before serving.
