Ingredients

For the Amla Candy

  • 500 g fresh amla (Indian gooseberries)
  • 1½ cups Sarbu Jaggery Powder
  • 1 tsp roasted cumin powder
  • ½ tsp dry ginger powder
  • ½ tsp fennel powder
  • ¼ tsp black pepper powder
  • ¼ tsp Sarbu Black Salt
  • 1 tbsp lemon juice

For Coating

  • 2 tbsp Sarbu Jaggery Powder, finely powdered
  • ½ tsp roasted cumin powder (optional)

Instructions

Step 1: Prepare the Amla

  1. Wash the amla thoroughly and place them in a steamer.
  2. Steam for 8–10 minutes until they become tender.
  3. Allow them to cool completely.
  4. Separate the segments and remove the seeds.
  5. Pat the amla pieces dry to remove excess moisture.

Step 2: Prepare the Jaggery Mixture

  1. Heat a heavy-bottomed pan on low heat.
  2. Add Sarbu Jaggery Powder and 2 tbsp water.
  3. Stir gently until the jaggery melts and forms a smooth syrup.
  4. Add roasted cumin powder, dry ginger powder, fennel powder, black pepper, and Sarbu Black Salt.
  5. Mix well.

Step 3: Coat the Amla

  1. Add the prepared amla pieces to the jaggery mixture.
  2. Toss gently until all the pieces are evenly coated.
  3. Cook on low heat for 5–7 minutes until the jaggery thickens and clings to the amla.
  4. Add lemon juice and mix well.
  5. Turn off the heat and allow the mixture to cool slightly.

Step 4: Dry the Candy

  1. Arrange the coated amla pieces in a single layer on a parchment-lined tray.
  2. Sun-dry for 1–2 days, turning occasionally, until the pieces become slightly firm and chewy.
  3. Alternatively, dry them in an oven at 60–70°C for 3–4 hours, checking occasionally.

Step 5: Coat & Store

  1. Once the candies are dry and no longer sticky, toss them with powdered Sarbu Jaggery Powder.
  2. Add a light sprinkle of roasted cumin powder if desired.
  3. Store in an airtight container.
