Ingredients
For the Puran (Sweet Filling)
- 1 cup chana dal (split Bengal gram)
- 1 cup Sarbu Jaggery Powder
- ½ tsp cardamom powder
- ¼ tsp nutmeg powder
- ½ tsp fennel powder (optional)
- 1 pinch saffron strands (optional)
For the Dough
- 2 cups whole wheat flour
- ¼ tsp turmeric powder
- ¼ tsp salt
- 2 tbsp oil or ghee
- Approximately ¾ cup water, as required

- Ghee, as required
Instructions
Step 1: Cook the Chana Dal
- Rinse 1 cup chana dal thoroughly under running water.
- Soak the dal in water for 30 minutes.
- Drain the water and transfer the dal to a pressure cooker.
- Add approximately 2½ cups water.
- Pressure cook for 3–4 whistles or until the dal is soft but not mushy.
- Drain any excess water completely and set the cooked dal aside.
Step 2: Prepare the Puran
- Transfer the cooked chana dal to a heavy-bottomed pan.
- Add 1 cup Sarbu Jaggery Powder.
- Cook on low to medium heat, stirring continuously.
- The jaggery will melt and the mixture will initially become loose.
- Continue cooking until the mixture thickens and starts leaving the sides of the pan.
- Add cardamom powder, nutmeg powder, fennel powder, and saffron if using.
- Mix well and switch off the heat.
- Allow the mixture to cool completely.
Step 3: Make the Dough
- In a large mixing bowl, combine 2 cups whole wheat flour, turmeric powder, and salt.
- Add 2 tbsp oil or ghee.
- Gradually add water and knead into a soft, smooth dough.
- Knead for 5–7 minutes until the dough becomes pliable.
- Cover and let it rest for 30 minutes.
Step 4: Prepare the Puran Balls
- Once cooled, mash the puran thoroughly until smooth.
- For an extra-smooth filling, pass it through a fine sieve or use a food processor.
- Divide the puran into 8–10 equal portions and shape them into balls.
- Divide the dough into the same number of portions.
Step 5: Stuff the Poli
- Take one portion of dough and flatten it into a small disc.
- Place one portion of the puran in the center.
- Bring the edges of the dough together and seal the filling completely.
- Gently flatten it with your fingers.
- Dust lightly with flour and roll into a 6–7 inch round.
- Roll gently to prevent the filling from coming out.
Step 6: Cook the Puran Poli
- Heat a tawa over medium heat.
- Place the rolled poli on the hot tawa.
- Cook until small bubbles appear on the surface.
- Flip and cook the other side.
- Apply a little ghee and cook until golden brown spots appear on both sides.
- Remove from the tawa and repeat with the remaining dough and filling.
Step 7: Serve
Serve the Puran Poli hot or warm, generously brushed with ghee.
