Ingredients

For the Dough

  • 2 cups whole wheat flour
  • 2 tbsp ghee
  • A pinch of salt
  • Approximately ¾ cup warm water, as required

For the Jaggery Filling

  • 1 cup Sarbu Jaggery Powder
  • 2 tbsp grated fresh coconut (optional)
  • ½ tsp cardamom powder
  • ½ tsp fennel seeds, lightly crushed
  • 2 tbsp chopped almonds
  • 2 tbsp chopped cashews
  • 1 tbsp sesame seeds
  • 1 tbsp ghee

For Cooking

  • Ghee, as required

Instructions

Step 1: Prepare the Dough

  1. Add 2 cups whole wheat flour and a pinch of salt to a mixing bowl.
  2. Add 2 tbsp ghee and mix well.
  3. Gradually add warm water and knead into a soft, smooth dough.
  4. Knead for 5–6 minutes until the dough becomes pliable.
  5. Cover and let it rest for 15 minutes.

Step 2: Prepare the Jaggery Filling

  1. Heat 1 tbsp ghee in a pan over low heat.
  2. Add sesame seeds and lightly roast for 1–2 minutes.
  3. Add chopped almonds, cashews, and grated coconut if using.
  4. Roast for another minute.
  5. Turn off the heat and allow the mixture to cool slightly.
  6. Add Sarbu Jaggery Powder, cardamom powder, and crushed fennel seeds.
  7. Mix thoroughly to create a dry, crumbly filling.

Step 3: Stuff the Roti

  1. Divide the dough into 6–8 equal portions and roll them into balls.
  2. Take one dough ball and flatten it into a small disc.
  3. Place 1–2 tbsp of the jaggery filling in the center.
  4. Bring the edges together and seal the filling completely.
  5. Gently flatten the stuffed dough.
  6. Dust lightly with flour and roll into a 5–6 inch round.
  7. Roll gently to prevent the jaggery filling from breaking through.

Step 4: Cook the Gud Ki Roti

  1. Heat a tawa over medium heat.
  2. Place the rolled roti on the hot tawa.
  3. Cook until small bubbles appear and the underside develops light brown spots.
  4. Flip and cook the other side.
  5. Apply a little ghee on both sides.
  6. Cook until golden brown spots appear and the roti is cooked through.
  7. Repeat with the remaining dough and filling.

Step 5: Serve

Transfer the hot Gud Ki Roti to a serving plate.
Brush with a little ghee and serve warm.
