Instructions
Step 1: Prepare the Coconut-Jaggery Filling
- Heat a heavy-bottomed pan over low heat.
- Add the grated coconut and roast gently for 2–3 minutes.
- Add Sarbu Jaggery Powder and mix well.
- Cook on low heat until the jaggery melts and the mixture becomes slightly thick.
- Add cardamom powder, nutmeg powder, chopped almonds, cashews, and poppy seeds, if using.
- Cook for another 2–3 minutes, then turn off the heat.
- Allow the filling to cool completely.
Step 2: Prepare the Modak Dough
- Bring water to a boil in a saucepan.
- Add ghee and a pinch of salt.
- Reduce the heat and gradually add rice flour while stirring continuously.
- Mix until the flour absorbs the water and forms a soft dough.
- Cover and rest for 5 minutes.
- While still warm, knead the dough until smooth and soft. Keep it covered to prevent drying.
Step 3: Shape the Modaks
- Divide the dough into 10–12 equal portions.
- Take one portion and flatten it into a thin circle using slightly greased fingers.
- Place 1–1½ tbsp of the coconut-jaggery filling in the center.
- Bring the edges together and create small pleats around the filling.
- Gently pinch the pleats together at the top to form the traditional modak shape.
- Repeat with the remaining dough and filling.
Step 4: Steam the Modaks
- Grease a steamer plate with a little ghee.
- Place the modaks carefully on the plate, leaving some space between them.
- Steam over medium heat for 10–12 minutes.
- Once the outer covering looks slightly glossy and cooked, turn off the heat.
- Allow them to rest for 2–3 minutes before removing.
Step 5: Garnish & Serve

Why Use Sarbu Jaggery Powder?
Sarbu Jaggery Powder gives the coconut filling a rich, naturally sweet flavor with warm caramel-like notes. Its fine texture melts easily with freshly grated coconut, creating a smooth and flavorful filling that pairs beautifully with the soft rice-flour covering.
Chef’s Tips
- Use fresh coconut for the best flavor and texture.
- Avoid overcooking the coconut-jaggery mixture, as it can become dry and chewy.
- Keep the rice-flour dough covered while shaping to prevent it from drying out.
- Make the outer covering thin but strong enough to hold the filling.
- Steam the modaks just until the outer layer is cooked; over-steaming can make them chewy.
