Ingredients
For the Coconut Barfi
- 2 cups freshly grated coconut
- 1 cup Sarbu Jaggery Powder
- ½ cup milk
- 2 tbsp ghee
- ½ tsp cardamom powder
- 2 tbsp chopped almonds
- 2 tbsp chopped cashews
- 1 tbsp chopped pistachios
For Garnishing
- 1 tbsp chopped pistachios
- 1 tbsp grated coconut
- A few chopped almonds
Instructions
Step 1: Prepare the Tray
- Grease a square or rectangular tray with ½ tsp ghee.
- Line it with parchment paper if desired.
- Keep it aside for setting the barfi.
Step 2: Cook the Coconut
- Heat 1 tbsp ghee in a heavy-bottomed pan.
- Add 2 cups freshly grated coconut.
- Sauté on low flame for 3–4 minutes, stirring continuously.
- Do not brown the coconut; it should remain light in color.
- Add ½ cup milk and mix well.
- Cook for another 3–4 minutes until the coconut becomes soft.
Step 3: Add Sarbu Jaggery Powder
- Add 1 cup Sarbu Jaggery Powder to the coconut mixture.
- Mix thoroughly until the jaggery melts and combines with the coconut.
- Cook on low to medium flame, stirring continuously.
- The mixture will gradually become thick and start leaving the sides of the pan.
Step 4: Add Nuts & Cardamom
- Add chopped almonds, cashews, and pistachios.
- Add ½ tsp cardamom powder.
- Add the remaining 1 tbsp ghee.
- Mix well and cook for another 2–3 minutes.
Step 5: Set the Barfi
- Once the mixture becomes thick and holds together, immediately transfer it to the prepared tray.
- Spread evenly using a greased spatula or the back of a spoon.
- Sprinkle chopped pistachios, almonds, and grated coconut over the top.
- Gently press the garnish into the surface.
Step 6: Cool & Cut
- Allow the barfi to cool at room temperature for 30–45 minutes.
- Once firm, cut into squares or diamond-shaped pieces.
- Serve immediately or store in an airtight container.
