Ingredients

For the Coconut Barfi

  • 2 cups freshly grated coconut
  • 1 cup Sarbu Jaggery Powder
  • ½ cup milk
  • 2 tbsp ghee
  • ½ tsp cardamom powder
  • 2 tbsp chopped almonds
  • 2 tbsp chopped cashews
  • 1 tbsp chopped pistachios

For Garnishing

  • 1 tbsp chopped pistachios
  • 1 tbsp grated coconut
  • A few chopped almonds

Instructions

Step 1: Prepare the Tray

  1. Grease a square or rectangular tray with ½ tsp ghee.
  2. Line it with parchment paper if desired.
  3. Keep it aside for setting the barfi.

Step 2: Cook the Coconut

  1. Heat 1 tbsp ghee in a heavy-bottomed pan.
  2. Add 2 cups freshly grated coconut.
  3. Sauté on low flame for 3–4 minutes, stirring continuously.
  4. Do not brown the coconut; it should remain light in color.
  5. Add ½ cup milk and mix well.
  6. Cook for another 3–4 minutes until the coconut becomes soft.

Step 3: Add Sarbu Jaggery Powder

  1. Add 1 cup Sarbu Jaggery Powder to the coconut mixture.
  2. Mix thoroughly until the jaggery melts and combines with the coconut.
  3. Cook on low to medium flame, stirring continuously.
  4. The mixture will gradually become thick and start leaving the sides of the pan.

Step 4: Add Nuts & Cardamom

  1. Add chopped almonds, cashews, and pistachios.
  2. Add ½ tsp cardamom powder.
  3. Add the remaining 1 tbsp ghee.
  4. Mix well and cook for another 2–3 minutes.

Step 5: Set the Barfi

  1. Once the mixture becomes thick and holds together, immediately transfer it to the prepared tray.
  2. Spread evenly using a greased spatula or the back of a spoon.
  3. Sprinkle chopped pistachios, almonds, and grated coconut over the top.
  4. Gently press the garnish into the surface.

Step 6: Cool & Cut

  1. Allow the barfi to cool at room temperature for 30–45 minutes.
  2. Once firm, cut into squares or diamond-shaped pieces.
  3. Serve immediately or store in an airtight container.
