Jaggery Chai
A warm, spiced milk tea sweetened with Sarbu Jaggery Powder instead of refined sugar — bringing a deeper, more rounded sweetness to your everyday cup of chai.

Ingredients

| Water | 1½ cups |
| Full-fat milk | 1 cup |
| Loose black tea leaves (or 2 tea bags) | 2 tsp |
| Sarbu Jaggery Powder | 3 tbsp |
| Fresh ginger, crushed | 1 tsp |
| Green cardamom pods, crushed | 3 |
| Black peppercorns, crushed (optional) | 1 pinch |
Method
1. Boil water with spices In a saucepan, bring the water to a boil. Add the crushed ginger and cardamom (and peppercorns, if using). Let it boil for 2 minutes to release the flavors.
2. Add the tea leaves Add the tea leaves to the boiling water. Reduce heat to low and let it simmer for 2–3 minutes to allow the tea to steep and darken.
3. Add milk and simmer Pour in the milk and bring the mixture back to a gentle boil. Simmer on low-medium heat for 3–4 minutes, stirring occasionally, until well infused and the color deepens.
4. Add the Sarbu Jaggery Powder Reduce heat to low. Add the jaggery powder and stir gently but immediately until fully dissolved. Simmer for 1 more minute, then turn off the flame.
5. Strain and serve Strain the chai into cups through a fine mesh strainer, pressing gently to extract all the liquid from the tea leaves and spices. Serve hot.
Chef’s Tips
- Add jaggery last, off high heat: Since jaggery is naturally acidic, adding it too early or to a hard, rolling boil can occasionally curdle the milk. Adding it at the end on low heat, and stirring immediately, minimizes this risk.
- Why Sarbu Jaggery Powder works best: Its fine, quick-dissolving texture blends smoothly into hot chai without leaving undissolved granules at the bottom of the cup.
- If it curdles: Straining well usually still gives you a perfectly good cup — just slightly less smooth in appearance. It won’t affect the flavor.
- Adjust to taste: Sweetness perception varies by jaggery batch and personal preference, so start with less and add more if needed.
