For the Jaggery Caramel Sauce

- ½ cup heavy cream
- 2 tbsp unsalted butter
- 2 tbsp water
- ½ tsp vanilla extract
- ¼ tsp sea salt
Instructions
Step 1: Melt the Jaggery
- Add 1 cup Sarbu Jaggery Powder and 2 tbsp water to a heavy-bottomed saucepan.
- Heat over low to medium flame, stirring gently until the jaggery powder melts completely.
- Allow it to simmer for 2–3 minutes until slightly thickened.
- Avoid cooking it for too long, as jaggery can become bitter if overheated.
Step 2: Add the Butter
- Reduce the heat to low.
- Add 2 tbsp unsalted butter.
- Whisk continuously until the butter melts and combines smoothly with the jaggery mixture.
Step 3: Add the Cream
- Slowly pour in ½ cup heavy cream while whisking continuously.
- The mixture may bubble vigorously, so add the cream carefully.
- Continue cooking on low heat for 2–3 minutes, stirring constantly.
- Cook until the sauce becomes smooth and slightly thick.
Step 4: Add Flavor
- Remove the saucepan from the heat.
- Add ½ tsp vanilla extract and ¼ tsp sea salt.
- Mix thoroughly.
- Allow the sauce to cool for a few minutes. It will thicken further as it cools.
Step 5: Serve & Store

Why Use Sarbu Jaggery Powder?
Sarbu Jaggery Powder gives this caramel sauce a rich, deep sweetness with a distinctive jaggery flavor. Its fine texture melts easily with butter and cream, creating a smooth, velvety sauce that works beautifully with cakes, ice cream, pancakes, and other desserts.
Chef’s Tips
- Use low to medium heat when melting jaggery to prevent it from burning.
- Warm the cream slightly before adding it to reduce excessive bubbling and help the ingredients combine smoothly.
- Whisk continuously while adding the cream for a silky, lump-free sauce.
- Don’t overcook the sauce; it will thicken considerably as it cools.
- Add a pinch more sea salt for a delicious salted-jaggery caramel variation.
- If the sauce becomes too thick, gently warm it with 1–2 tbsp cream or milk.
- If the sauce is too thin, simmer it for another 1–2 minutes.
- Store refrigerated in a clean, airtight container and reheat gently before serving.
