Ingredients
For the Kheer Bites
- ½ cup basmati rice
- 3 cups full-fat milk
- ¾ cup Sarbu Jaggery Powder
- 2 tbsp milk powder
- ½ tsp cardamom powder
- 2 tbsp chopped almonds
- 2 tbsp chopped cashews
- 1 tbsp raisins
- 1 tbsp ghee
- 1 tbsp desiccated coconut
- 1 tbsp chopped pistachios
For Garnishing
- Chopped pistachios
- Almond slivers
- A light sprinkle of cardamom powder
Instructions
Step 1: Prepare the Rice
- Wash the basmati rice thoroughly and soak it in water for 15–20 minutes.
- Drain well and lightly crush the rice using a mortar and pestle or pulse it once in a mixer.
- Keep aside.
Step 2: Cook the Kheer
- Heat milk in a heavy-bottomed pan and bring it to a gentle boil.
- Add the rice and cook on low heat, stirring frequently.
- Continue cooking for 15–20 minutes until the rice is completely soft and the milk thickens.
- Add milk powder, almonds, cashews, raisins, and desiccated coconut.
- Cook for another 3–4 minutes.
Step 3: Add the Jaggery & Cardamom
- Turn off the heat and allow the kheer to cool slightly.
- Add Sarbu Jaggery Powder and mix thoroughly until completely dissolved.
- Add cardamom powder and mix well.
- If the mixture appears too loose, cook it for another 2–3 minutes on low heat until it becomes thick enough to shape.
Step 4: Shape the Kheer Bites
- Grease your palms lightly with ghee.
- Take small portions of the cooled, thickened kheer mixture.
- Roll gently into small bite-sized balls.
- If needed, refrigerate the mixture for 20–30 minutes to make shaping easier.
Step 5: Garnish & Chill
- Roll each bite in chopped pistachios or almond slivers.
- Sprinkle lightly with cardamom powder.
- Refrigerate for at least 30 minutes before serving.
