Ingredients

For the Modak Filling

  • 1½ cups freshly grated coconut
  • ¾ cup Sarbu Jaggery Powder
  • ½ tsp cardamom powder
  • ¼ tsp nutmeg powder
  • 1 tbsp chopped almonds
  • 1 tbsp chopped cashews
  • 1 tbsp poppy seeds (optional)

For the Modak Dough

  • 1 cup rice flour
  • 1½ cups water
  • 1 tsp ghee
  • 1 pinch salt

For Garnishing

  • Chopped almonds and cashews
  • Light sprinkle of cardamom powder
  • A few saffron strands (optional)

Instructions

Step 1: Prepare the Coconut-Jaggery Filling

  1. Heat a heavy-bottomed pan over low heat.
  2. Add the grated coconut and roast gently for 2–3 minutes.
  3. Add Sarbu Jaggery Powder and mix well.
  4. Cook on low heat until the jaggery melts and the mixture becomes slightly thick.
  5. Add cardamom powder, nutmeg powder, chopped almonds, cashews, and poppy seeds, if using.
  6. Cook for another 2–3 minutes, then turn off the heat.
  7. Allow the filling to cool completely.

Step 2: Prepare the Modak Dough

  1. Bring water to a boil in a saucepan.
  2. Add ghee and a pinch of salt.
  3. Reduce the heat and gradually add rice flour while stirring continuously.
  4. Mix until the flour absorbs the water and forms a soft dough.
  5. Cover and rest for 5 minutes.
  6. While still warm, knead the dough until smooth and soft. Keep it covered to prevent drying.

Step 3: Shape the Modaks

  1. Divide the dough into 10–12 equal portions.
  2. Take one portion and flatten it into a thin circle using slightly greased fingers.
  3. Place 1–1½ tbsp of the coconut-jaggery filling in the center.
  4. Bring the edges together and create small pleats around the filling.
  5. Gently pinch the pleats together at the top to form the traditional modak shape.
  6. Repeat with the remaining dough and filling.

Step 4: Steam the Modaks

  1. Grease a steamer plate with a little ghee.
  2. Place the modaks carefully on the plate, leaving some space between them.
  3. Steam over medium heat for 10–12 minutes.
  4. Once the outer covering looks slightly glossy and cooked, turn off the heat.
  5. Allow them to rest for 2–3 minutes before removing.

Step 5: Garnish & Serve

Transfer the steamed modaks to a serving plate.
Garnish with chopped nuts, cardamom powder, and saffron strands, if desired. Serve warm with a little ghee.
