Ingredients

For the Chikki

  • 1 cup white sesame seeds (til)
  • ¾ cup Sarbu Jaggery Powder
  • 1 tbsp ghee
  • 1 tbsp water
  • ½ tsp cardamom powder
  • 1 tbsp chopped almonds (optional)

For Setting

  • ½ tsp ghee, for greasing
  • Parchment paper or a greased rolling surface

Instructions

Step 1: Roast the Sesame Seeds

  1. Heat a heavy-bottomed pan over low to medium heat.
  2. Add the sesame seeds and dry roast for 3–4 minutes.
  3. Stir continuously until they become lightly golden and aromatic.
  4. Transfer them to a bowl and set aside.

Step 2: Prepare the Jaggery Syrup

  1. In the same pan, add Sarbu Jaggery Powder, water, and 1 tbsp ghee.
  2. Cook on low heat, stirring continuously, until the jaggery melts completely.
  3. Continue cooking until the syrup becomes thick and reaches a firm, brittle consistency.
  4. To test, drop a little syrup into cold water. It should harden immediately and break when pressed.

Step 3: Combine the Sesame & Jaggery

  1. Lower the heat and quickly add the roasted sesame seeds.
  2. Add cardamom powder and chopped almonds, if using.
  3. Mix rapidly until the sesame seeds are evenly coated with the jaggery.

Step 4: Roll & Set the Chikki

  1. Immediately transfer the hot mixture onto a greased surface or parchment paper.
  2. Cover with another sheet of parchment paper.
  3. Roll it out quickly into an even, thin layer using a rolling pin.
  4. Remove the top sheet and cut into squares or diamond-shaped pieces while still warm.
  5. Allow the chikki to cool completely and harden.

Step 5: Serve

Once completely cool, separate the pieces and serve.
