Ingredients

For the Jaggery-Spiced Nuts

  • 1 cup almonds
  • 1 cup cashews
  • ½ cup walnuts, roughly chopped
  • ½ cup peanuts
  • ¾ cup Sarbu Jaggery Powder
  • 2 tbsp water
  • 1 tbsp ghee
  • ½ tsp cinnamon powder
  • ½ tsp roasted cumin powder
  • ¼ tsp black pepper powder
  • ¼ tsp red chilli powder
  • ½ tsp Sarbu Black Salt
  • ¼ tsp cardamom powder

For Garnishing

  • 1 tbsp sesame seeds
  • A light sprinkle of cinnamon powder

Instructions

Step 1: Roast the Nuts

  1. Heat a heavy-bottomed pan over low to medium heat.
  2. Add the almonds, cashews, walnuts, and peanuts.
  3. Dry roast for 5–7 minutes, stirring frequently.
  4. Roast until the nuts become lightly golden and aromatic.
  5. Transfer the roasted nuts to a plate and set aside.

Step 2: Prepare the Jaggery Coating

  1. Heat 1 tbsp ghee in the same pan.
  2. Add ¾ cup Sarbu Jaggery Powder and 2 tbsp water.
  3. Cook over low heat until the jaggery powder melts completely.
  4. Add cinnamon powder, roasted cumin powder, black pepper, red chilli powder, Sarbu Black Salt, and cardamom powder.
  5. Mix well and cook for 2–3 minutes until the mixture becomes slightly thick and sticky.

Step 3: Coat the Nuts

  1. Add the roasted nuts to the jaggery mixture.
  2. Stir quickly and gently until all the nuts are evenly coated.
  3. Cook for another 1–2 minutes, ensuring the jaggery coating remains glossy and doesn’t burn.

Step 4: Cool & Set

  1. Transfer the coated nuts onto a sheet of parchment paper or a lightly greased plate.
  2. Spread them into a single layer.
  3. Sprinkle sesame seeds over the top.
  4. Allow the nuts to cool completely for 15–20 minutes.
  5. Once firm, separate any nuts that have stuck together.

Step 5: Serve

Transfer the cooled jaggery-spiced nuts to a serving bowl and enjoy as a crunchy snack.
