Ingredients

For the Rasam

  • ½ cup toor dal (pigeon peas)
  • 2 cups water
  • 1 medium tomato, finely chopped
  • 1–2 green chillies, slit
  • 1 tbsp tamarind pulp
  • 1½ tbsp Sarbu Jaggery Powder
  • ½ tsp turmeric powder
  • ½ tsp Sarbu Black Salt
  • ½ tsp regular salt
  • 1 tsp rasam powder
  • ½ tsp freshly ground black pepper
  • ½ tsp roasted cumin powder
  • 1 tbsp fresh coriander leaves, chopped

For Tempering

  • 1 tbsp ghee
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 1–2 dried red chillies
  • 8–10 curry leaves
  • 1 pinch asafoetida (hing)

Instructions

Step 1: Cook the Toor Dal

  1. Rinse ½ cup toor dal thoroughly.
  2. Add the dal, turmeric powder, and 2 cups water to a pressure cooker.
  3. Pressure cook for 3–4 whistles or until the dal becomes soft.
  4. Mash the cooked dal until smooth and keep aside.

Step 2: Prepare the Tamarind Mixture

  1. Add 1 tbsp tamarind pulp to a saucepan.
  2. Add approximately 1 cup water, chopped tomato, and slit green chillies.
  3. Add rasam powder, black pepper powder, roasted cumin powder, and salt.
  4. Bring the mixture to a gentle boil.
  5. Simmer for 8–10 minutes until the raw smell of tamarind disappears and the tomatoes become soft.

Step 3: Add Sarbu Jaggery Powder

  1. Add 1½ tbsp Sarbu Jaggery Powder to the simmering tamarind mixture.
  2. Stir well until completely dissolved.
  3. Simmer for another 2–3 minutes.
  4. Adjust the jaggery according to your preferred balance of sweet and tangy flavors.

Step 4: Add the Dal

  1. Add the mashed toor dal to the tamarind mixture.
  2. Add another 1–1½ cups water to achieve a thin, soup-like consistency.
  3. Add Sarbu Black Salt.
  4. Mix well and bring to a gentle simmer.
  5. Cook for 3–4 minutes.
  6. Avoid boiling vigorously after adding the dal.

Step 5: Prepare the Tempering

  1. Heat 1 tbsp ghee in a small pan.
  2. Add mustard seeds and allow them to crackle.
  3. Add cumin seeds, dried red chillies, and curry leaves.
  4. Add a pinch of hing and immediately turn off the heat.
  5. Pour the hot tempering over the rasam.

Step 6: Garnish & Serve

  1. Add freshly chopped coriander leaves.
  2. Mix gently and let the rasam rest for 2–3 minutes.
  3. Serve hot in bowls or alongside steamed rice.
